This is a very light and rather refreshing cake. My friend, Brenda, makes this cake often and it's always a big hit. Even though I have made it myself, I always call it her recipe because she loves to make this cake. She would be so proud that I have submitted this recipe.

Ingredients For brenda's ho ho cake

2 cself-rising flour

1/2 cbaking cocoa

2 cgranulated sugar

1 stickbutter or margarine, softened

3eggs

1 1/4 cmilk, divided

2 tspvanilla extract
- FROSTING:

8 ozpkg cream cheese, softened

1 stickbutter or margarine, softened

16 ozpowdered sugar

12 ozcool whip
How To Make brenda's ho ho cake

1Preheat oven to 350. Grease and flour (or sprinkle with cocoa instead of flour) three 8" cake pans or two 9" cake pans.

2CAKE: Mix flour and cocoa in bowl and set aside.

3In a mixer bowl, cream sugar and butter with electric mixer until light and fluffy. Add eggs, one at a time, beating well after each addition.

4Now add flour mixture and half of the milk to that and mix well. Add remaining milk and vanilla and beat for 2 additional minutes.

5Pour into prepared pans and bake at 350 for 25-30 minutes or until layers tests done. Cool completely before frosting.

6FROSTING: Combine cream cheese and butter and mix with electric mixer until light and fluffy.

7Gradually add in the powdered sugar and combine well. Add in the cool whip and stir with spoon until well combined.

8Spread between layers, on sides and top of cooled cake layers.
