I was just brainstorming one day, thinking of what i can make with leftover bananas in a 8x8 glass pan and no mixer. I cobbled this together from my handy-dandy Joy of Cooking. And i love baking with booze

Ingredients For boozy banana coffee cake
- CAKE BATTER

1 1/2 cap flour

1 1/2 tspbaking powder

1/2 tspsalt

2/3 cbrown sugar, firmly packed

1/3 cshortning
-
2eggs
-
2-3mashed ripe bananas
-
1/2 cbooze soaked raisins (i used whiskey since thats what i had)
- CRUMBLE

1/3 cbrown sugar, firmly packed

2 Tbspap flour
-
2 Tbspbutter, softened
- GLAZE
-
1/2 cbrown sugar
-
1/4 cmilk
-
1/2 stickbutter
-
1/4 choney
How To Make boozy banana coffee cake
-
1Preheat oven to 350, grease the bottom and sides of a 8x8 glass baking dish

2Make BATTER
-
3wisk dry ingredients together
-
4cream together shortning and sugar
-
5beat 2 eggs into sugar mix
-
6slowly mix dry ingedients into wet, in 2 batches
-
7add mashed bananas, mix til blended
-
8fold in rasins
-
9Make CRUMBLE
-
10mix crumble ingredients til well blended and crumbly

11Pour 1/2 - 2/3 of the batter into well greased pan

12sprinkle with brown sugar crumbles
-
13evenly spread remaining batter over crumble layer

14Make GLAZE

15in small saucepan on low heat, mix glaze ingredients

16Bring to low boil
-
17gently pour glaze over the cake before baking

18Bake at 350 for about 30-35 min, or til toothpick comes out clean near the center of the pan

19*omit this step if desired* poke holes in the cake with a toothpick, drizzle some booze over cake while still warm
-
20allow cake to cool completely before serving
