A Cuckoo Cake. This is an oldie and fun cake. It has a fun name. Quite appropriate for our times, too. Why is it called a Cuckoo Cake? You will find out when you read the Directions. But don't let that put you off. It is a yummy snack cake with pecans and melted chocolate on top. Kids and adults alike will approve. I am on my way to the kitchen to have a big slice of cake and a glass of cold milk! Enjoy!

Ingredients For bonnie's cuckoo cake

  • DRY INGREDIENTS
  • 1 1/4 cups flour
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 1 1/2 teaspoon baking powder
  • WET INGREDIENTS
  • 1/3 cup oil
  • 1 egg
  • 1 teaspoon vanilla
  • 3/4 cup milk
  • OTHER
  • 1/4 cup pecans
  • RESERVED
  • 1/4 cup chocolate chips, semi-sweet

How To Make bonnie's cuckoo cake

  • 8 inch pyrex baking dish

    Preheat the oven to 350 degrees. Use a deep 8 inch baking dish. Bake for 30 to 45 minutes or until it passes the toothpick test.
  • Dry ingredients

    Add the dry ingredients to the dish.
  • Wet ingredients

    Put the egg in a small bowl and whisk it with the vanilla.
  • Make two holes in the flour

    Make two indentations in the flour with your fist.
  • Egg in one, oil in the other, and milk on top.

    Add oil to one and the egg and vanilla to the other one.
  • Whisk to combine.

    Whisk together.
  • Add milk and whisk until smooth.

    Add the milk and whisk until batter is smooth.
  • Stir in the pecans.

    Stir in the pecans.
  • Bake the cake!

    Bake the cake until it is a lovely golden brown and passes the toothpick test.
  • Spread the chocolate chips over the cake while it is still hot.

    Sprinkle the chocolate chips on top of the hot cake and wait five minutes for them to melt, then spread over the cake.
  • Chocolate chips spread over the top of the hot cake to frost it.
