bonnie's cuckoo cake
A Cuckoo Cake. This is an oldie and fun cake. It has a fun name. Quite appropriate for our times, too. Why is it called a Cuckoo Cake? You will find out when you read the Directions. But don't let that put you off. It is a yummy snack cake with pecans and melted chocolate on top. Kids and adults alike will approve. I am on my way to the kitchen to have a big slice of cake and a glass of cold milk! Enjoy!

Ingredients For bonnie's cuckoo cake
- DRY INGREDIENTS

1 1/4 cups flour

1 cup sugar

1/2 teaspoon salt

1 1/2 teaspoon baking powder
- WET INGREDIENTS

1/3 cup oil
-
1 egg
-
1 teaspoon vanilla
-
3/4 cup milk
- OTHER
-
1/4 cup pecans
- RESERVED
-
1/4 cup chocolate chips, semi-sweet
How To Make bonnie's cuckoo cake

1Preheat the oven to 350 degrees. Use a deep 8 inch baking dish. Bake for 30 to 45 minutes or until it passes the toothpick test.

2Add the dry ingredients to the dish.

3Put the egg in a small bowl and whisk it with the vanilla.

4Make two indentations in the flour with your fist.

5Add oil to one and the egg and vanilla to the other one.

6Whisk together.

7Add the milk and whisk until batter is smooth.

8Stir in the pecans.

9Bake the cake until it is a lovely golden brown and passes the toothpick test.

10Sprinkle the chocolate chips on top of the hot cake and wait five minutes for them to melt, then spread over the cake.
