My husband made his spin on this classic dessert. We used frozen blueberries & it was delicious!

Ingredients For blueberry cobbler

3 cblueberries

1/2 c+ 3t + 3t sugar

1/2 corange juice (lime or lemon juice may be substituted)

2/3 cflour
-
1/4 tspbaking powder, heaped

1 pinchsalt
-
1/2 cbutter, room temperature
-
1egg
-
1/2 tspvanilla extract
-
1/2 tspcinnamon (optional)
-
1/2 tspnutmeg (optional)
-
1/4 tspcloves, ground (optional)
-
1/4 tspmace (optional)
How To Make blueberry cobbler

1Preheat oven to 375F.

2In an 8” x 8” baking pan, spread blueberries. Drizzle orange juice over the top & sprinkle 3 Tbsp of sugar.

3Mix gently & briefly just to ensure juice & sugar are evenly distributed.

4In a small bowl mix thoroughly the flour, baking powder & salt, along with any combination of optional spices. Set aside.

5In a large bowl, cream the 1/2 cup sugar with the butter until light & fluffy. Incorporate the egg & vanilla.

6In batches, gradually add in flour mixture just until combined.

7Drop spoonfuls of the batter on top of the blueberries, covering as much as possible without actually spreading the batter.

8Sprinkle the remaining 3 Tbsp of sugar over the top to lend a little crisp to the cake layer.

9Bake for 35-40 minutes until cake is golden brown.
