Ingredients For blueberry cake

2 Tbspcornmeal

1 Tbspvanilla extract

2/3 clow-fat buttermilk

2egg whites

1egg

1/4 ccanola oil

1/2 cport wine

1 tspcloves, ground

1 tspground cinnamon

1/4 tspsalt

1.5 tspbaking soda

1.5 tspbaking powder

3 cblueberries
How To Make blueberry cake

1Preheat the oven to 350.

2In a large mixing bowl, combine all the dry ingredients and set aside.

3In a small saucepan, reduce the port over medium heat to 1/4 cup.

4Cool to room temperature.

5Add the port and remaining ingredients, except the blueberries, to the dry mixture, one at a time, stirring constantly, until combined and smooth.

6Gently fold in the blueberries.

7Lightly spray or wipe a 7 x 11 inch glass baking pan with vegetable oil.

8Pour the batter into the pan with and bake for 45 minutes, or until a toothpick inserted in the center comes out clean.

9Serve warm from the oven or cool to room temperature.
