This has been a favorite that I've made a lot for the past 30 years. I have also used this batter to bake muffins. I entered the muffins in the County Fair and won the blue ribbon. This is an excellent recipe that can be made the night before and baked the next morning. Enjoy!
Blue Ribbon Recipe
Love blueberries and coffee cake? Then you have to try this recipe! The cake is not overly sweet. It's soft, tender, and melts in your mouth. There is the perfect amount of blueberries in the cake that you get one in each bite. Sugar sprinkled on top crisps in the baking process and adds a nice touch of sweetness.

Ingredients For blue ribbon blueberry coffee cake

1egg, beaten
-
1/2 csugar
-
1 1/4 call-purpose flour
-
2 tspbaking powder
-
3/4 tspsalt
-
1/2 cmilk
-
3 Tbspbutter, melted
-
1 cblueberries, fresh
- TOPPING

1 Tbspbutter, melted

2 Tbspsugar
How To Make blue ribbon blueberry coffee cake

1In a mixing bowl beat egg and sugar until thick.

2In a separate bowl combine flour, baking powder, and salt.

3Alternately add flour and milk to the egg mixture. Beat after each addition until blended.

4Stir in melted butter.

5Fold in blueberries.

6Pour batter into a greased and floured 8-inch square baking pan. Sprinkle with 2 tablespoons of sugar.

7Cover and refrigerate overnight.

8Preheat oven to 350 degrees. Bake for 35 minutes or until top springs back when lightly touched.

9While still hot, brush the top with the remaining butter. Cool before cutting.

10*** NOTE *** When making muffins with this recipe I bake them about 18-20 minutes. Check oven to be sure that they spring back before removing.
