I was told by a family member to never make this again because he almost ate the whole cake in one day.

Blue Ribbon Recipe

One bite and we understood why Samantha's family member could eat the whole cake in a day. With a tropical feel, it reminds us of summer. Made with crushed pineapple, it's irresistibly moist. The cake is topped with creamy cream cheese icing and finished with a sprinkle of toasted coconut. This easy dessert is perfect for any occasion, but it really has a nice summer feel to it.
