big ole bill's delicious pineapple cake
A light, fluffy, moist pineapple and walnut cake with just the right hint of vanilla that will melt in your mouth. A thick cream cheese and coconut frosting makes this cake decadently rich and refreshing and will have your guests asking for seconds. A cool refreshing cake for a warm day!

Ingredients
- FOR THE CAKE
- 2 cups all purpose flour
- 2 cups granulated sugar
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 2 eggs
- 2 teaspoons vanilla
- 2/3 cup chopped walnuts or pecans
- 1 Can /20 ounce crushed pineapple with juice
- FOR THE FROSTING
- 8 ounces cream cheese at room temperature
- 1 stick butter at room temperature
- 2 teaspoons vanilla
- 2 1/2 cups powdered sugar
- 1 cup flaked coconut
- walnuts or pecans for garnish

Step 1Put all the cake ingredients in a mixer bowl and mix on medium speed until fully combined.

Step 2Pour batter into an ungreased 13x9-inch baking pan.

Step 3Bake at 350 degrees for 30 to 35 minutes until a toothpick inserted in the center comes out clean.

Step 4While cake is baking, make the frosting by beating the cream cheese and butter together on high speed until fluffy. Add the vanilla, powdered sugar and coconut to the bowl and mix until creamy.

Step 5When the cake is fresh out of the oven, poke several small holes in the cake. Spread a thin layer of the frosting on. Reserve the rest of the frosting.

Step 6Allow the cake to completely cool, spread the rest of the frosting on top and garnish with walnuts or pecans.

Step 7Cover and refrigerate to store.
