I had taken a cake recipe I had discovered and revamped it with this dish. I had extra fruit lying around the house that I had previously diced for another dish and wanted to use it up. This was the perfect dish to do so with. Great for a summer picnic!

Want an easy patriotic dessert? Sweet, fruity, and fresh, you have to give this delightful dessert a try. It would be delicious at any Memorial Day, Fourth of July, or Labor Day barbecue. We chose to pair our cake with buttercream frosting. But, doctor it the way you wish with different fruits and frosting. This got lots of thumbs up in the Test Kitchen.

Ingredients For berry delight cake

1 boxFrench vanilla cake mix

12 oz7up/Sprite

1 cancake frosting, any flavor

1 cstrawberries, diced

1/2 cblackberries, halved
How To Make berry delight cake

1Preheat oven to 350 degrees. Grease cake pans. (I used two 8" round pans.)

2In a mixer, combine cake mix and 12 oz. of soda. Mix until combined. Pour into cake pans and bake according to directions on the box. (Toothpick should come out clean.)

3Dice your strawberries and blackberries while the cake is baking.

4Once cool, place 1 round cake pan on the bottom of a baking dish, whole. Take the 2nd cake and crumble or dice it.

5Add a layer of frosting. (I chose chocolate. You could replace frosting with a cool whip/pudding mix as well.)

6Add a layer of diced strawberries & blackberries on top of the frosting.

7Sprinkle part of the crumbled cake over the fruit. Repeat steps 5 & 6. Refrigerate before & after serving.
