Ingredients For berry buckle

  • 3/4 c
    white sugar
  • 1/2 c
    vegetable shortening
  • 1
    egg
  • 1/2 c
    milk
  • 1 tsp
    vanilla
  • 2 c
    all purpose flour
  • 1 tsp
    baking powder
  • 1/2 tsp
    salt
  • 2 c
    blueberries, or any berrie that you like.
  • toppings:
  • 1/2 c
    flour
  • 1/4 c
    butter, softened
  • 1 tsp
    cinnamon, ground
  • 1/2 c
    brown sugar, packed

How To Make berry buckle

  • 1
    Preheat oven 375. Grease and flour a 9by9 pan. With electric mixer cream together white sugar and shortening, then add egg, milk and vanilla, mix together. In seperate bowl sift together, flour, baking powder and salt, put with creamed mixture and mix well.Add the berries and stir by hand. For topping mix together flour, brown sugar, cinnamon, now mix in the butter until crumbly. Put batter in prepared pan, put topping on top of batter, bake 40-50 min. Test with toothpick, poke Middle of cake with toothpick if it comes out clean the cake is done. Great with ice cream or coolwhip!
