I made these cupcakes for a college age Christmas party and it was a hit. Even the boys wanted the recipe to share with their moms. I did not use a frosting, the filling serves as a center decoration when it cooks it leaves a small claw print on the top. I hope you like it.

Ingredients For bea claws

  • 1 1/2 c
    all purpose flour
  • 1 1/8 c
    sugar
  • 2 1/4 c
    cocoa, unsweetened dry
  • 1 c
    water
  • 1/2 tsp
    salt
  • 1 tsp
    baking soda
  • 1 Tbsp
    white vinegar
  • 1/4 oz
    cooking oil
  • FILLING
  • 8 oz
    cream cheese
  • 1/2 c
    sugar
  • 1
    egg
  • 6 oz
    chocolate semi sweet chips

How To Make bea claws

    Preheat at 350 degrees mix dry ingredients

    add oil, water, vinegar fill 1/2 cupcake liners

    in separate bowl mix filling ingredients together whip cream cheese, sugar and eggs add chocolate chips

    add 1 tablespoon of filling mixture in center of batter of each cupcake
