barbara's mandarin/pineapple cake

this is my favorite cake I make it every year for my Birthday, it is a very tasty cake and just beautiful to look at too

Ingredients

  • box 1 yellow cake mix
  • - 4 eggs
  • ounce 1-11 ounce can mandarin oranges
  • - 1 large can crushed pineapple
  • - 1 tub cool whip
  • - 2 tbl sour cream
  • package 1 pistachio flavor instant pudding
  • - sweet shredded coconut
  • - nuts { toasted almonds, chopped pecans etc.}

How To Make barbara's mandarin/pineapple cake

  • Step 1
    mix cake mix,mandarin oranges with the juice, 1/2 can of the crushed pineapple and eggs, mix well and pour into round cake pans, bake at 350 for 30 minutes
  • Step 2
    mix pudding, sour cream and remainder of the crushed pineapple with cool whip and set a side
  • Step 3
    cool cakes and frost with cool whip mixture, mound the top with sweet coconut and wrap toasted almonds or pecan around from bottom to top of cake
