I have has this recipe for a long time- and usually make it for all my holiday and summer block parties. It is moist and very flavorful- great served with pineapple sherbet. I hope you enjoy this family recipe-It was posted in my first book I wrote in 1982 when I worked at the newspaper as a food editor.

Ingredients For banana ring cake
- CAKE:

2 cgranulated sugar

3 lgeggs

1 cvegetable oil

3 call purpose flour
-
1 tspcinnamon

1 tspsalt

1 tspbaking soda
-
2 tspvanilla extract

2 cmashed bananas
-
8 ozcan crushed pineapple and juice

1/4 cchopped nuts
- ICING:
-
8 ozpkg. cream cheese , softened

1/2 cbutter, at room temperature

1 tspvanilla extract
-
1 lbpowdered sugar
How To Make banana ring cake

1Preheat oven to 350^. Spray a bundt pan well with non stick cooking spray. Set aside. In a large mixer bowl combine the sugar ,eggs and oil. Mixing well. Combine dry ingredients and add alternately with the bananas and pineapple, mix only until blended. Stir in remaining ingredients.

2Pour into prepared pan and bake for 1 1/4 hours; or until tested done by the toothpick test.

3Icing: Beat together the butter and cream cheese - blend well. add vanilla and stir in; gradually add in powdered sugar until of spreading consistency.(add a little water if necessary).
