I was taught this recipe when I was about 13 years old. My mom had a bunch of over ripe bananas. I never forgot it,and I hope you enjoy it.

Ingredients For banana pudding balls

  • PREPARE YOUR FAVORITE PANCAKE DOUGH
  • MIX JUST TIL MOISTENED......... DO NOT OVER MIX......ADD
  • 1 tsp
    cardamom
  • 1 tsp
    cinnamon
  • 2 tsp
    vanilla extract
  • 1 Tbsp
    baking powder
  • 2 Tbsp
    sugar
  • BETTER SHOULD BE THICK, IF NOT ADD FLOUR OR MORE PANCAKE MIX
  • 2 slice
    bananas over ripe
  • 1 1/2 c
    canola oil for frying

    Bring frying oil to 360F (temp. for deep frying)

    After mixing together your pancake batter....

    submerge each slice of bannana in pancake mix (one at a time )

    carfully place in frying oil * as soon as banana hit the oil ( turn over to other side) ... this ensures even cooking on both sides. Aprox. 2 min. on each side.
