I made this cake for cake balls at a wedding rehearsal. They were a big hit!

Ingredients For banana nut cake
- CAKE

2 1/4 csugar

3/4 csolid vegetabble shortening

1 1/2 cbananas, mashed, ripe (3 bananas)

3eggs
-
1 1/2 tspvanilla extract

3 call purpose flour
-
1 tspsalt
-
1 1/2 tspbaking powder

1 1/4 tspbaking soda

1 cbuttermilk
-
1 1/2 cpecans, chopped (optional)
- FROSTING

1 cbananas, mashed, ripe (2 bananas)

3 Tbspbutter, softened

2 cpowdered sugar
-
1 1/2 cpecans, chopped (optional)
How To Make banana nut cake

1Preheat oven to 350 degrees; spray 3 9-inch cake pans with Pam.

2Cream sugar and shortening together with mixer.

3Add mashed banans, eggs and vanilla; mix well.

4In small bowl, combine flour, salt, baking powder and baking soda.

5Add dry ingredients to banana mixture alternately with buttermilk. Beat 3 minutes on medium.

6Stir in pecans; pour batter into pans. Bake 30 minutes

7FROSTING: Beat together bananas, butter and powdered sugar. Add additional powdered sugar if needed to achieve spreading consistency. Stir in pecans.

8Spread frosting making a triple layer cake.
