I made this cake for cake balls at a wedding rehearsal. They were a big hit!

Ingredients For banana nut cake

  • CAKE
  • 2 1/4 c
    sugar
  • 3/4 c
    solid vegetabble shortening
  • 1 1/2 c
    bananas, mashed, ripe (3 bananas)
  • 3
    eggs
  • 1 1/2 tsp
    vanilla extract
  • 3 c
    all purpose flour
  • 1 tsp
    salt
  • 1 1/2 tsp
    baking powder
  • 1 1/4 tsp
    baking soda
  • 1 c
    buttermilk
  • 1 1/2 c
    pecans, chopped (optional)
  • FROSTING
  • 1 c
    bananas, mashed, ripe (2 bananas)
  • 3 Tbsp
    butter, softened
  • 2 c
    powdered sugar
  • 1 1/2 c
    pecans, chopped (optional)

How To Make banana nut cake

    Preheat oven to 350 degrees; spray 3 9-inch cake pans with Pam.

    Cream sugar and shortening together with mixer.
  • 3
    Add mashed banans, eggs and vanilla; mix well.

    In small bowl, combine flour, salt, baking powder and baking soda.

    Add dry ingredients to banana mixture alternately with buttermilk. Beat 3 minutes on medium.

    Stir in pecans; pour batter into pans. Bake 30 minutes

    FROSTING: Beat together bananas, butter and powdered sugar. Add additional powdered sugar if needed to achieve spreading consistency. Stir in pecans.

    Spread frosting making a triple layer cake.
