This cake is delicious, and moist. I double the frosting. If you don't have maple flavoring, vanilla will do.

2 call purpose flour

1 1/3 csugar

1 tspsalt

1 tspbaking powder

1 tspbaking soda

2 tspinstant coffee powder

1 tspmaple extract

1/2 cshortening
-
1 cmilk

2eggs
-
1 mdbanana, cut in half

1/2 cchopped walnuts (optional) for topping
- FROSTING

1/2banana

1/4 cbutter, softened

1 tsplemon juice

2 cconfectioners' sugar
How To Make banana, maple cake (with a hint of coffee)

1preheat oven to 350 degrees, spray a 13x9 in cake pan.

2In large bowl combine all ingredients except banana and reserved nuts.mix well and then add sliced 1/2 banana, mix for 3 min on med speed.

3Pour into prepared pan, and bake for 25-30 minutes until top springs back when lightly touched. cool completely before frosting.

4For Frosting. In small bowl mix banana, butter and lemon juice (may look a little curdled) blend in confectioners sugar and beat until creamy, frost cooled cake and sprinkle with chopped nuts if desired.
