I got this recipe off of the Breadbeckers website. I used freshly ground soft white berries. This cake is so moist and delicious.

Ingredients For banana coffee cake

3 chalf whole wheat flour & half white or use all freshly ground soft white berries

1 tspsalt

1 tspbaking powder
-
1/2 tspbaking soda
-
1/2 tspnutmeg
-
2 cmashed ripe banana
-
2/3 choney
-
1/3 coil, melted butter or applesauce
-
2 tspvanilla
-
2 lgeggs
- TOPPING
-
1/2 cbrown sugar
-
2 Tbspwater
-
1 1/2 Tbspbutter
-
1/4 cwalnuts
-
1/4 cunsweetened coconut (if using sweetened just reduce amount of brown sugar)
How To Make banana coffee cake

1Combine dry ingredients.

2Combine bananas, honey, oil, vanilla & eggs until well blended.

3Add flour mixture & beat well.

4Pour batter in well greased 13 x 9 baking pan.

5Bake at 350' for about 30 minutes or until a toothpick inserted comes out clean.

6Place all the topping ingredients in a small saucepan.

7Simmer for 1 minutes over medium heat while stirring.

8Remove from heat & stir in the coconut & nuts.

9Spread over the cake.
