banana carrot cake
I tend to make up recipes depending on how many ingredients I have on hand, this one was browning bananas & excess carrots.

1 1/2 cflour

1/2 cwhite sugar

1/2 clight brown sugar

2eggs, room temp

2ripe bananas

2 cshredded carrots

1/4 ccoconut oil

How To Make banana carrot cake

1in a large bowl combine, flour, baking soda, baking powder, salt & cinnamon

2in another bowl cream the eggs and sugar, add in mashed bananas, fold in shredded carrots

3in another bowl cream the eggs, sugar & coconut oil add in mashed bananas, fold in shredded carrots

4add the flour mix to the wet ingredients, divide batter into 2 buttered cake pans bake at 350 degrees for about 45 mins or until toothpick in center comes out clean.

6I frosted with cream cheese frosting=1 stick butter, 8oz cream cheese (both room temp) 2 cups powdered sugar, 1 teaspoon vanilla whip the butter and cream cheese well, add in powdered sugar and vanilla .
