I was looking for a recipe to use up the bananas in my freezer and I found this one.I made it yesterday,took it to a picnic today and it was gone in a flash.People were going back for seconds.

Ingredients For banana cake with cream cheese frosting

  • 2 c
    flour
  • 3/4 tsp
    baking soda
  • 1/2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1/2 c
    butter
  • 1 1/2 c
    sugar
  • 2 lg
    eggs
  • 1 1/4 c
    sour cream (divided)
  • 1 1/3 c
    mashed bananas (about 3 large)
  • FROSTING
  • 2/3 c
    powdered sugar
  • 8 oz
    cream cheese
  • 1/2 c
    remaining sour cream
  • 2 Tbsp
    lemon juice (add to cake mixture with bananas

    Preheat oven to 350.Lightly butter & flour 13x9" metal baking pan. In medium bowl combine flour,baking soda,baking powder and salt.Using electric mixer beat butter and 1 1/2 cups sugar in large bowl until blended.Add eggs and beat until fluffy.Mix in 3/4 cup sour cream,bananas and lemon juice.Add dry ingredients to banana mixture and beat until well blended.Transfer to prepare pan and bake for 30-35 minutes.Until golden brown. cool

    For frosting:Beat remaining sour cream,softened cream cheese and powdered sugar.Spread on cooled cake.Can be sprinkled with chopped walnuts or pecans if desired.
