Ingredients For ~ banana cake & banana frosting ~

  • 1 2/3 c
    sugar
  • 2/3 c
    softened, butter
  • 2/3 c
    butter milk or soured milk
  • 4 md
    ripe bananas
  • 2
    eggs
  • 2 1/2 c
    flour
  • 1 tsp
    salt
  • 1 1/4 tsp
    each - baking soda & baking powder
  • 1/2 - 3/4 c
    chopped pecans - optional
  • FROSTING
  • 1 lg
    banana
  • lemon
    juice
  • 1/4 c
    softened, butter
  • 3 1/2 c
    confectioners' sugar

How To Make ~ banana cake & banana frosting ~

    Preheat oven to 350 degree F. Grease a couple 9 inch cake pans or a 9 x 13 baking dish or pan.

    In a large bowl, cream butter and sugar, well and beat in buttermilk. Lightly beat in the eggs and banana's. In another bowl, sift together dry ingredients. Add to the wet mixture and beat just until incorporated. Stir in nuts if using. Spread evenly into prepared pan or pans. Place in oven and bake 25 - 30 minutes for individual cakes or 40 - 45 minutes for 9 x 13 or until a pick inserted into the center comes out clean. Cool completely.

    Make frosting: Mash banana and sprinkle with 1/4 - 1/2 tsp lemon juice. Cream butter and 1 cup of sugar. Beat in the banana and add remaining sugar. If a stiffer frosting is desired add more sugar until you get desired consistency.
