Great way to use overripe bananas. This is a very moist heavy cake. Great flavor. My husband doesn't care for " tea" breads but he does likes cakes.

Ingredients For banana cake

1 1/2 cgranulated sugar

1 csour cream
-
1/4 cbutter, room temperature

1 3/4 cmashed ripe bananas

2 tspvanilla extract
-
2eggs
-
2 1/3 call-purpose flour
-
1 tspsalt
-
1 tspbaking soda
-
1/2 canchopped walnuts (optional)
- VANILLA FROSTING
-
2 canconfectioners' sugar
-
1/4 cbutter, room temperature
-
1/4 cshortening
-
1 tspvanilla extract
-
1 tspalmond extract
-
milk
How To Make banana cake
-
1Put all cake ingredients together in a large mixing bowl; Mix until all ingredients are mixed together ( batter will be thick )

2Pour into a greased 13 x 9 cake pan.

3Bake at 375 degrees or until a toothpick inserted in the middle comes out clean. ( 20-25 ) minutes.

4Cool in pan then frost. (Recipe follows)

5For frosting; cream butter and shortening together until creamy.

6Add vanilla and almond flavorings and mix until blended.

7Add the confectioners sugar and beat until smooth.

8Add enough milk to make frosting of spreading consistency.

9Frost your cake and enjoy!!
