There are a lot of good banana bread recipes, but this is my favorite. My dear aunt was employed by Bell South Telephone Company for over 40 years. The Telephone Pioneers, as the employees were called, produced several wonderful cookbooks over the years and this recipe came from one of those great cookbooks called "Dining With Pioneers." My aunt was one of the top sellers of these cookbooks for Councils of Tennessee Chapter #21 Telephone Pioneers of America, for which she belonged. There's no telling how many she purchased and gave to people. They were a favorite gift for many years for lots of brides.

Ingredients For banana bread

  • 1/2 c
    shortening
  • 1 c
    sugar
  • 2
    eggs
  • 3
    mashed ripe bananas
  • 2
    cup sifted plain flour (i use self-rising and leave out the soda)
  • 1 tsp
    soda
  • 1/2 c
    chopped pecans

How To Make banana bread

  • 1
    Preheat oven to 350 degrees. Mix shortening, sugar and eggs, blend well. Add bananas, beat well. Add flour and soda, beat well after each addition. Add nuts, mix well. Pour batter into well greased and floured pan (this recipe is very old, back when we greased and floured pans, I spray with cooking spray). Bake for approximately 1 hour or until done.
