My son helped me make these cupcakes and he told me he had to have the first one, he hasn't stopped eating them since we made them and every time he says they are delicious.

Ingredients For awesome banana chocolate chunk cupcakes

  • 1 1/4 c
    brown sugar, light
  • 1 1/4 c
    sugar
  • 4 lg
    eggs
  • 2 1/2 c
    cake flour
  • 1 tsp
    ground ginger
  • tsp
    nutmeg
  • 3/4 c
    olive oil, extra virgin
  • 2
    bananas
  • 1 lg
    block milk chocolate (broken up)
  • 1 lg
    block very dark chocolate(broken up)
  • 1 Tbsp
    banana instant pudding mix

How To Make awesome banana chocolate chunk cupcakes

    mix together the sugar, oil, eggs, nutmeg, ginger and mix well. smash up the bananas and add to mixture. Add flour and instant pudding mix and mix until just combined, then mix in the broken chocolate (break up the chocolate until quite small pieces).

    fill muffin cups until half full, bake in a pre-heated 350 oven for 25-30 minutes, check after 25 minutes by sticking a sharp knife of toothpick into the center of the cupcakes. Ice cooled cupcakes with Nutella chocolate spread.
