Ingredients For aunt alice's no grate (but great) carrot cake

1 1/2 cflour

1 1/4 csugar

1/2 ccooking oil

1egg, sightly beaten
-
8 ozcan crushed pineapple,drained

14 ozstrained baby food carrots

3 1/2 ozcoconut
-
1/2 cwalnuts, chopped
-
1 1/2 tspcinnamon

1 tspbaking soda
-
1 tspvanilla
How To Make aunt alice's no grate (but great) carrot cake

1In a mixing bowl combine flour, sugar, baking soda,and cinnamon. Mix well with a fork.

2Add egg, vanilla, pineapple, coconut, oil and nuts. Add carrots and mix well.

3Pour mixture into an 8x8 greased pan. Bake at 350' for 55 minutes.

4Cool. Serve plain or with your favorite topping. Enjoy !!
