I got this recipe from a coworker over 35 years ago. The cake is super moist and flavorful and the lemon frosting accents the flavor of the cake - so delicious!

4 cchopped apples

2 csugar

2eggs

½ cvegetable oil

2 tspvanilla

2 call purpose flour

2 tspbaking soda (dissolve in bit of water)

2 tspcinnamon

1 tspsalt

1 cchopped walnuts or pecans

4 Tbspbutter

3 cpowdered sugar

2 Tbsplemon juice
-
1-2 Tbspcold water
How To Make apple walnut cake with lemon butter frosting

1Combine apples and sugar and set aside.

2Beat eggs. Beat in oil and vanilla.

3Mix flour, soda, cinnamon and salt. Stir in alternately with sugar-apple mixture.

4Stir in nuts. Pour into greased 9 x 13 pan. Bake at 350° for 1 hour and cool.

5Frosting: Cream 4 TBSP butter. Add the 3 cups of powdered sugar. Beat in lemon juice (2 TBSP) and enough cold water (1-2 TBSP) to make icing spread easily. Beat and apread on cake.
