Have you ever tried an APPLE UP-SIDE DOWN Cake?? It is a delicious change from the pineapple one. I have even made this cake with strawberry rhubarb,from my garden! For a festive affair, I add pecans and cherries to the fruit topping. It makes it so colorful and pretty enough for a picture! Your family and guests will love it,so get ready for compliments!! Ingredients For apple up-side down cake

10 Tbspbutter, softened

1/2 clight brown sugar

3apples....peeled, cored & sliced into 6 -8 wedges. i used galas.

1 Tbsplemon juice

1-1/2 cwhite flour
-
1-1/2 tspbaking powder
-
1/2 tspsalt
-
1/2 tspcinnamon
-
1/2 csugar
-
2 lgeggs...beaten
-
1 tspvanilla extract
-
1/2 cmilk
How To Make apple up-side down cake

1In a medium bowl toss the apples with the lemon juice. Pre-heat oven to 350. Grease the sides and bottom of a 9 inch cake pan, using 2 tablespoons of butter from the 10 tablespoons of butter. Arrange the apples wedges in the pre pared pan, over the brown sugar, going in circles..starting on the outer rim going in a circle to the center. Sprinkle the cake pan with the brown sugar.

2In a medium bowl whisk together the flour, baking powder, salt and cinnamon. Set aside. Using an electric mixer, beat the remaing 8 tablespoons of butter with the white sugar until light and fluffy. Add beaten eggs and vanilla, beat again. Then with mixer on on low speed alternatly add the flour mixture in 3 parts and the milk in two, begining and ending with the milk.

3Spoon the batter over the apples. Bake 45 to 30 minutes, until a toothpick inserted comes out clean. Cool cake in the pan on a wire rack for 30 minutes or more...no longer than 6 hours! When ready to serve, run a knife around the edge of the pan. Invert the cake on a serving platter. Serve with your favorite ice-cream . MMmmm! GOOD!!
