Another recipe from my apprenticeship class and one that garnered kudos from the profs. This is a holiday favorite of the family, as well....perfect for decorating. Great taste and texture.

Ingredients For apple pecan layer cake

2 1/2 cflour, sifted

2 csugar
-
1 tspbaking soda
-
1 tspbaking powder
-
1 tspsalt
-
1 tspcinnamon
-
1 1/2 capplesauce
-
3/4 cveg. oil
-
2eggs
-
1/2 cpecans, chopped
- FROSTING
-
1/2 cbutter - do not use margarine
-
4 1/2 cconfectioners' sugar
-
6-8 Tbspapple juice
How To Make apple pecan layer cake

1Heat oven to 350 degrees. Grease and flour two 9" cake pans.

2Spoon flour into measuring cup; level off. In large bowl, combine flour, sugar, baking soda, baking powder, salt and cinnamon.

3Add applesauce, oil and eggs; blend on low till moistened. Then beat 2 minutes on high.

4Stir in pecans. Pour batter into prepared pans. Bake till toothpick or cake tester inserted comes out clean. Cool 10 minutes; then remove from pans.

5FROSTING: Cool cake completely. In small heavy saucepan over medium heat, brown butter till light golden brown, stirring constantly.

6Remove from heat; cool completely. In large bowl, combine browned butter, powdered sugar and 4 TBSP. of apple juice; blend on low till moistened.

7Continue beating till well blended, adding additional apple juice until of spreading consistency. Fill and frost cake. Garnish with pecans, if desired. NOTE: Walnuts work just as well and give great flavor.
