apple pecan cake

This is a quick recipe to throw together. The longest part is chopping the apples, and of course waiting on it to bake! But it’s so worth it. Not really a sweet cake. It pairs well with a nice cup of coffee or hot tea. Great hot out of the oven. Wrap one up and freeze it for later or gift one to your neighbor!

Ingredients For apple pecan cake

  • 2 c
    sugar
  • 2 tsp
    vanilla
  • 1 c
    oil
  • 1 c
    chopped pecans
  • 2
    eggs
  • dash of salt
  • 3 c
    a/p flour
  • 3 c
    finely chopped honeycrisp apples
  • 1 tsp
    baking soda
  • water if needed, up to 1/2 cup

How To Make apple pecan cake

    Preheat oven to 325. Grease and flour two 9x5 loaf pans
  • 2
    Combine sugar, oil, eggs, vanilla, salt & baking soda. Mix well.

    Add pecans and apples to this mixture. Mix well.

    Gradually add flour to this mixture. If it is too dry you can add water at this point a little at a time, until it’s come to a consistency that you can stir it easier. I have used peach juice from my canned peaches instead of water.

    Pour mixture into your prepared loaf pans evenly.
