I tried this where I work and everyone enjoyed it and were looking for the leftovers.... which i froze for another day.. I doubled it for a 9 by 13 pan

Ingredients For apple crumb sugar cake

2 ctart siced apples

2 csugar

1 tspcinnamon

1/4 tspginger
-
1/2 tspallspice, ground

1 Tbsplemon juice
-
1/4 tspsalt
-
2 cflour (i use unbleached)

2 tspbaking powder
-
1/2 cbutter
-
2 mdeggs, separated
-
1/2 cmilk
How To Make apple crumb sugar cake

1Mix sliced apples,1 cup sugar, spices and lemon juice; set aside.

2sift together remaining sugar, salt, flour and baking powder; add butter. Mix thoroughly using a fork; reserve 1 cup butter mixture.

3stir in well-beaten egg yolks and milk to remaining butter mixtrue. Fold in beaten egg whites; mix thoroughly. Pour int well-greased 9 by 9 baking pan. Drain apple mixture; spread on top of batter. Cover with reserved butter mixture. Bake at 400 degrees for 45 minutes. When done, sprinkle additional cinnamon over to of cake (i don't do this )
