A classic Apple Cake recipe that I adapted to make my own. If it is not apple season, and cider is not available use milk to make the glaze.

Ingredients For apple cake

  • 3 c
    flour
  • 1 tsp
    baking soda
  • 2 tsp
    cinnamon, ground
  • 1/4 tsp
    ginger powder
  • 1 1/2 c
    canola oil
  • 2 c
    sugar
  • 3 lg
    eggs, at room temperature
  • 2 tsp
    vanilla
  • 1 tsp
    lemon juice
  • 3 md
    apples, peeled and thinly sliced
  • 1/2 c
    walnuts, chopped and toasted
  • GLAZE
  • 1 c
    confectioners' sugar
  • 1 Tbsp
    apple cider

How To Make apple cake

    Preheat oven to 350 degrees.

    Toast walnuts on sheet pan in oven for 7-10 minutes.

    Line 13x9" baking pan with parchment paper. Spray parchment with cooking spray.

    Whisk flour, baking soda, cinnamon and ginger.

    Beat oil, sugar and eggs until pale and slightly thick.

    Beat in vanilla and lemon juice.
  • 7
    Add dry ingredients and mix until combined.

    Fold in walnuts and apples.
  • 9
    Transfer to prepared pan.

    Bake 35-40 minutes.

    Cool in pan.

    Prepare glaze: Mix confectioners sugar and apple cider until smooth. Drizzle on cake, when cooled.
