I had got this recipe from an old classmates mother when I was in 8th grade many moons ago. She was such a lovely woman. I think of her often when I make this. This cake is so moist that you don't have to frost.

2 csugar

1 tspvanilla extract

2 cflour

2 tspbaking soda

1/8 tspsalt

1 cchopped, walnuts

6 capples, peeled and chopped
- CREAM CHEESE FROSTING

1 1/2 canpowdered sugar

6 ozcream cheese, softened

3 Tbspbutter

1/2 tspvanilla extract

1 pinchsalt
How To Make apple cake

1Beat eggs; add sugar and cdeam well. Add vanilla.

2Sift together flour, baking soda, salt and cinnamon. Add alternately, with flour.

3Stir in apples and nuts. Pour mixture into 15x9x21/2 inch pan which has been greased and floured. Bake 1 hour in a 350 degrees oven. Cool before frosting.

4Frosting: Cream together all of the frosting ingredients. Frost cake and top with finely chopped walnut, if you like.
