Many years ago, my mother-in-law shared this recipe with me. She was a wonderful Italian lady who could cook circles around anyone. Although this is not an Italian recipe, it is so easy to make and so, so good. The cake batter is very thick and the apples just seem to melt into the other ingredients as it cooks. After a big meal, this is the perfect dessert with a cup of coffee. I have even been know to nibble on it for breakfast. I hope you all enjoy it as much as I do. This can be served warm or at room temp.

Ingredients For apple cake

4 craw apples (green-pippin)

2 csugar

2eggs

2 tspvanilla extract

1/2 cvegetable oil

2 call purpose flour

2 tspcinnamon

2 tspbaking soda

1 tspsalt

1 cnuts, chopped (pecan or walnut)
How To Make apple cake

1Preheat oven to 350

2In a large mixing bowl, mix together, sugar, eggs, vanilla extract, oil, flour, cinnamon, baking soda and salt.

3Add bite-size apple pieces and gently mix into batter.

4Mix in chopped nuts

5Scrap (batter will be to thick to pour) into a 9"x13" greased and floured pan.
