This cake is incredibly moist and delicious, even a few days later if it is kept well covered! Feel free to add nuts or if it is too sweet remove some of the sugar! I do everything by hand including the mixing. However, this is a pretty thick batter so if you have a mixer it will help incorporate all the ingredients quickly,

Ingredients For apple cake
- FOR THE CHOPPED APPLES

6 mdapples, mcintosh (or whatever kind you enjoy) peeled, cored and roughly chopped

1 Tbspcinnamon

1/2 Tbspnutmeg

2 Tbspwhite sugar

3 Tbspbrown sugar

1/2 mdlemon juice, fresh
- FOR THE CAKE

2 3/4 csifted flour
-
1 Tbspbaking powder
-
1 cvegetable oil
-
1 cwhite sugar
-
3/4 cbrown sugar
-
1/4 corange juice, fresh
-
2 1/2 tspvanilla extract

4 lgeggs
How To Make apple cake

1Pre heat oven to 350 degrees. Grease a tube cake pan (very very well), or whatever type of pan you would like to use. Keep in mind, this is a very large and dense cake and needs room to expand without spilling over! You need 3 bowls, one large and two medium sized.

2First, peel core and chop the apples and toss them with the cinnamon, sugar and lemon juice in one of the medium sized bowls. Place these aside until later.

3Mix together the flour, and baking powder in the large mixing bowl. In the other medium sized bowl wisk together oil, orange juice, sugar and vanilla.

4Slowly begin to combine the wet ingredients into the dry ingredients. After these are combined being to mix in the eggs one at a time. It is important to keep scraping down the sides of the bowl to make sure that all ingredients are mixed together very well.

5There are two ways to finish this recipe and put it into the oven. I like to mix the apples into the batter after it is completed. However, some websites I have seen that make a cake similar to this like to layer the apples. It is up to your personal taste! Whatever you choose, is going to be fantastic.

6Stick the cake into the 350 degree oven for about 1 and a 1/2 hours, or until a cake tester comes out clean!
