This recipe was given to me by a gypsy woman years ago. Its a very good cake and stays moist as long as the cake survives, which is not very long.

Ingredients For apple cake

  • 1/2 c
    butter, softened
  • 2 c
    sugar
  • 2 lg
    eggs
  • 6 md
    apples,finely chopped
  • 2 c
    all purpose flour
  • 2 tsp
    baking soda
  • 1/2 tsp
    salt
  • 1 tsp
    cinnamon, ground
  • 1 tsp
    nutmeg
  • 1 c
    chopped walnuts
  • ICING
  • 3 oz
    cream cheese, room temperature
  • 1/2 stick
    butter,softened
  • 1 box
    powdered sugar
  • 1/4 c
    milk

How To Make apple cake

    Cream butter and sugar very light and fluffy, Beat eggs in one at a time[very well]. Stir in apples. Sift together flour, baking soda, salt, cinnamon, and nutmegStir flour mixture, nuts, and apples mixture together. Bake 45 minutes in a 13x9 pan in a 350 degree oven.

    ICING---Take 3 oz cream cheese and cream with butter. Add powdered sugar and milk til Icing is stiff.

    ICING Variation;--Beat together 2 tablespoon butter, 1 cup sifted powdered sugar, 1/2 teaspoon vanilla. Add 1---2 tablespoon apple juice beating til spreading consistency.
