Since going "gluten free", I've toyed with a few of my family's favorite holiday recipes. This one turned out to be a HIT at Christmas.

Ingredients For apple bundt cake (gf) with coconut pecan frosting

  • 1 box
    betty crocker gluten free yellow cake layer mix
  • 3/4 c
    pamela's gluten free baking & pancake mix (plus 2 tbls. to dust bundt pan)
  • 3/4 tsp
    salt
  • 1 tsp
    cinnamon, ground
  • 1/4 tsp
    cloves, ground
  • 1 stick
    butter or margarine
  • 1/2 c
    apple sauce
  • 1/4 c
    water
  • 2 tsp
    vanilla extract
  • 4
    eggs
  • 4 c
    chopped apples (peeled)
  • 1/2 c
    walnuts (pieces)
  • 1/2 c
    raisins, plumped in hot water & drained
  • 1 can
    betty crocker coconut-pecan frosting, divided
  • FROSTING
  • 3 Tbsp
    butter or margarine
  • 3/4 c
    powdered sugar
  • 1 pinch
    salt
  • 1/2 c
    coconut (plus extra to sprinkle on cake)
  • reserved 1/2 can of frosting
  • colored sugar or sprinkles

How To Make apple bundt cake (gf) with coconut pecan frosting

    Combine cake mix, Pamela’s, salt and spices
  • 2
    Stir in softened butter, apple sauce, water, vanilla, eggs and half of the canned frosting
  • 3
    Beat on low for 30 seconds to combine, then on high for 2 minutes, scraping bowl occasionally.

    Stir in apples, nuts and raisins just until blended.

    Put in a greased and “dusted” Bundt pan and bake at 325 degrees for 45 minutes or until cake starts to pull away from the sides of the pan.

    Remove from oven and let rest for 10 minutes. Turn out onto serving plate. Drizzle with frosting when completely cool.

    Melt butter in saucepan over low heat. Add powdered sugar and salt; stir to combine.

    Stir in reserved ½ can of frosting. Bring just to a rolling boil. Take off heat and stir occasionally to cool in pan -- about 10 minutes.

    Drizzle frosting over cooled cake. Decorate with coconut and colored sugar or sprinkles
