First time we had this was when we were at a Amish farm and we helpped them hand pick a feild of corn. They had two teams of horses and two wagons and we would husk the corn and throw it onto the wagon. When we had about a row left, the Amish dad told the little girl to have mom bake a cake, we'll be done soon. My daughter drove the oldest son to the store and they got a gallon of ice cream. Warm cake with ice cream dripping ,,,, it was AWESOME.

  • 1 1/4 c
    boiling water
  • 1 c
    quick cooking oats
  • 1 c
    sugar
  • 1 c
    brown sugar
  • 1 tsp
    vanilla extract
  • 1 1/3 c
    flour
  • 1 tsp
    baking powder
  • 1 stick
    margarine
  • 2
    egg
  • 1 tsp
    baking soda
  • 1 tsp
    cinnamon
  • 1/2 tsp
    salt
  • TOPPING
  • 1/2 c
    chopped nuts
  • 1 c
    brown sugar
  • 1 stick
    margarine
  • 1 c
    coconut
  • sm. amount of milk

How To Make amish oatmeal-nut cake

  • 1
    Pour water over oats; let stand for 2 minutes. Do not drain. Cream oleo and sugar with oats. Add beaten eggs and dry ingredients. Bake in a greased 9X13 inch cake pan at 350 for 35 to 40 minutes. Mix topping all together; put on cake (while cake is still warm) and bake until topping is bubbling or light brown in color.
