This recipe comes from Aunt Nin - she was cook in the Wheelersburg School System in 1968 and 'made up' recipes with what was on hand for teachers meetings etc. I have shared this recipe 100s of time since then. She used the last of the pot coffee so it was stronger. I've made it with fresh morning coffee and it isn't as good - you can use day before coffee.

Ingredients For amish coffee cake

2 cbrown sugar, firmly packed

2 cflour
-
3/4 cbutter
-
1egg
-
2 tspvanilla

1 cstrong coffee
-
1 tspsoda
How To Make amish coffee cake

1Turn oven on to 350 degrees

2Can use three 9" cake or pie pans OR a 9x13 pan

3In a bow mix brown sugar, flour and butter until lumpy (like strudel) DO NOT MIX UNTIL CREAMY

4Take out one cup of the above mixture for topping

5Add soda to hot coffee to dissolve

6To the balance in bowl add the egg, vanilla, then add the HOT coffee/soda mixture - mix well

7This is a thin batter - just spread it into baking pan and sprinkle on topping evenly. Put in preheated oven

8Should spring up when done - about 30-35 mins

9While still warm sprinkle xxxsugar aka powdered sugar on top - doesn't take a lot.
