Great for Easter! I use semi-sweet chocolate chips instead of milk chocolate chips. I also toasted almonds first before putting them on the coconut layer.

Ingredients For almond joy cake

  • 1 box
    chocolate cake mix with pudding
  • 1 c
    evaporated milk
  • 1 c
    sugar
  • 14 oz
    coconut, shredded
  • 1-1/2 c
    sugar
  • 1 stick
    butter
  • 12 oz
    milk chocolate chips
  • 1 c
    whole almonds
  • 24 lg
    marshmellows
  • 1/2 c
    evaporated milk

How To Make almond joy cake

    Bake cake according to package directions. While cake is baking combine 1 cup evaporated milk and 1 cup of sugar in saucepan and bring to a boil. Remove from heat and stir in marshmallows until melted. Stir in coconut.

    When cake is done, use a large fork to poke holes in cake. Spread coconut mixture on top of cake.

    Combine 1/2 cup milk and 1-1/2 cup of sugar in saucepan. Bring to boil. Remove from head and add one stick of butter until melted. Add chocolate chips and stir until smooth.

    Arrange almonds on top of coconut layer. Pour warm chocolate mixture over almond coconut layer.
