This is a good combination of two of my favorite foods, Almonds and Apricots. It has a little tang of orange flavor. A popular recipe with the Canadian Living Test Kitchen.

1/2 cbutter, softened

3/4 csugar

2 mdeggs

1 Tbspgrated orange rind

3/4 Tbspalmond extract

3/4 cslivered, dried apricots

1 1/2 call purpose flour

1/2 cground almonds

1 1/2 tspbaking powder

1 tspbaking soda

1/4 tspsalt

1 1/4 csour cream
- GLAZE

2/3 csugar

2 Tbsporange juice

1/4 tspalmond extract
How To Make almond apricot bundt cake

1Grease 10 cup tube pan or Bundt Pan; set aside.Preheat oven to 325 degrees F.

2In large bowl, beat butter with sugar until fluffy,beat in eggs, one at a tine; beat in orange rind and almond extract. Stir in apricots. In separate bowl, whisk together flour,ground almonds,baking powder, baking soda, and salt; stir half of this mixture into butter mixture. Stir sour cream into butter mixture; stir in remaining flour mixture. Scrape into prepared pan.

3Bake until cake tester inserted in center of cake come out clean, about 45 minutes. Let cool in pan on rack for 10 minutes. Remove from pan to rack.

4GLAZE: In small bowl, whisk together sugar, orange juice, and almond extract; brush over hot cake. Let cool completely.
