Ingredients For 14 karat cake

2 call purpose flour

2 tspbaking powder

1 1/2 tspsalt

2 tspcinnamon

1 clight brown sugar

1 cwhite sugar

4 lgeggs

1 1/2 ccanola oil or oil of your choice

2 ccarrots, grated
-
1 8 ozcan crushed pineapple, drained

1 cpecans, chopped
-
1 small cancoconut optional
- BUTTERMILK GLAZE

1 cwhite sugar
-
1/2 tspbaking soda
-
1/2 cbuttermilk
-
1/2 cbutter
-
1 Tbspwhite corn syrup

1 tspvanilla extract
How To Make 14 karat cake

1To make cake: Mix first 4 ingredients together in large bowl. In mixing bowl combine sugars. Beat eggs and add oil. Add oil and eggs mixture to sugars. Mix into dry ingre. Add carrots ,pineapple, pecans and coconut. Pour in prepared pans and bake until done. I make mine in a 9X13 pan and takes 35-45 minutes depending on your oven.

2Buttermilk glaze Combine all except vanilla in saucepan and bring to a boil over med heat. Cook for 4 minutes stirring while it boils. Remove from heat and add vanilla. Spread hot glaze over warm cake. Cool and frost.

3Orange Cream Cheese Frosting 1/2 cup butter 8 ounce cream cheese, soft 1 teas each of vanilla, orange juice, orange rind 1 pound powdered sugar Mix butter and soft cream cheese. Add rest of ingredients. FYI..I double this since my family loves frosting!
