1 cup extra virgin olive oil
2 onions (sliced thinly)
4 cloves garlic (finely chopped)
2 teaspoons dried oregano
1/2 cup red wine vinegar
1/3 cup chopped flat leaf parsley
salt and freshly ground pepper
