Name: Day 8 - Countdown to Christmas - Peanutter Butter Truffles
Ingredients: 1 - 16oz package of Nutter Butter cookies or 2 boxes of Do-Si-Dos (that is, if you didn't inhale them all); 80z package of cream cheese, room temperature; 3/4 cup creamy peanut butter (trust me, you don't want Chunky!); 1/2 cup plus 2 Tbl confectioners sugar; 1 pound of good chocolate, chopped into small pieces - I like a combo of 60% milk, 30% dark and 10% bittersweet; 1/3 cup chopped milk chocolate; 2-3 Tbl creamy peanut butter
