INGREDIENTS
4 pounds corned beef brisket
12 red potatoes quartered
4 carrots sliced
2 onions sliced
3 bay leaves
8 black peppercorns
1 head cabbage wedged
12-ounce bottle stout or dark ale
Corned beef shrinks by about 50%, so for generous servings and maybe some leftovers, buy about one pound of meat per person.
