4 6 ounce salmon fillets with skin

4 cups fresh baby spinach
•
Ginger-Lime Sauce - recipe to follow
•
6 shallots, sliced
•
1 cup vegetable or peanut oil + 2 tablespoons
•
flour for dusting
•
salt & pepper to taste

Ginger-Lime Sauce - combine all ingredients in small bowl, stir well and set aside for 30 minutes to let flavors come together.
•
2 Thai chiles, substitute 1 serrano chile, chopped
•
2 cloves garlic, grated
•
1 tablespoon sugar
•
1 tablespoon fresh grated ginger
•
1 tablespoon fish sauce
•
1 teaspoon sesame oil
•
1 tablespoon soy sauce
•
1 tablespoon fresh squeezed lime juice
•
1 tablespoon water
