2 tablespoons unsalted butter
1 tablespoon olive oil, plus more as needed
1 cup chopped white onion
4 cloves of garlic, finely minced
1/2 cup low sodium chicken broth
2 teaspoons fresh lemon juice
1 cup heavy whipping cream
1 (heaping) cup freshly grated parmesan cheese
12-ounce jar marinated & quartered artichokes, liquid drained & discarded/reserved
