350 g ( 3/4 lb) chicken breast fillets, cut into bite-size pieces

1 large shallot, finely chopped

2 large garlic cloves, finely chopped

75 ml (1/3 cup) dry white wine
•
Juice of 1 medium lemon
•
Zest of half a medium lemon

200 ml (1 cup) double (heavy) cream

30 g (1/3 cup) grated parmesan
•
2 tablespoons fresh parsley, roughly chopped
