Ingredients: 1x 500g | 17oz packet macaroni pasta; 1 onion, chopped; 1 carrot, washed, peeled and chopped; 1/2 red capsicum/bell pepper, washed, seeded and diced; 500g | 1lbs boneless, skinless chicken thigh fillets, cubed; 1 head of broccoli, washed and cut into florets; 200g | 7oz sliced mushrooms, washed; 2 cloves garlic, minced or finely chopped; 500ml light cooking cream (I used 2x tubs Philadelphia Extra Light cream for cooking); 2 tablespoons vegetable stock powder (Vegeta); Salt to season; 3/4 cup parmesan cheese, grated and divided
