Ingredients For creamed partridge

  • 3 lb. deboned partridge breasts
  • 1/2 C. butter (or margarine)
  • 1/2 C. all purpose flour
  • 1 1/2 pts. whipping cream
  • Salt and pepper to taste

How To Make creamed partridge

  • 1
    Rinse partridge and pat dry. Coat with flour. Melt butter (or margarine) in a large skillet. Saute' partridge until browned. Add salt and pepper to taste. Place partridge in a baking dish. Top partridge with unwhipped cream and cover tightly. Bake in a 350F oven for about 45 minutes, or until tender. Cream makes delicious gravy. (Pheasant can also be used)
