1/8 teaspoon salt
2 1/2 cups (567g) heavy cream or whipping cream
3/4 cup (84g) confectioners' sugar
2 to 3 teaspoons (4g to 6g) lime zest (grated rind) from about 2 medium limes
2 tea bags hibiscus tea
1/3 cup (38g) confectioners' sugar
