1 heaping cup frozen peas and carrots (no need to thaw)
4 cloves garlic (minced)
1 1/2 tsp garlic salt
1 tsp lemon pepper or black pepper
1 tsp dry Italian seasoning or oregano
1/2 tsp dried thyme
2 cups low sodium beef stock
1/4 cup Worcestershire sauce
1 6 oz can tomato paste
Mashed Potatoes:
2 1/2-3lb russet potatoes (peeled and cubed)
2 tsp salt (divided use)
4 Tbsp butter
2/3 cup milk (additional as needed)
1/2 cup sour cream
Topping:
2 Tbsp grated Parmesan cheese
few pats butter (to dot the top)
2 Tbsp chopped Italian parsley
